Job Description

  Summary of the position:

Chinese Cuisine Chef is responsible for overseeing the production of Chinese cuisine for restaurants and banquets; prepare a wide variety of Chinese menu items, including rice, noodle, soup, vegetable, and meat dishes; also have to make necessary food purchases. Thus, s/he should be good at evaluating the quality of food products to ensure that he or she maintains consistent quality standards; expected to improve upon their recipes with occasional experimentation. S/he may also decide on the prices of their dishes, determine the presentation of menu items, and menus engineering.

What you will do:
- Assist Corporate Chef in creating, selecting and developing dishes, taking into consideration such as: local requirements; market needs; competition; trends; potential costs; availability of food products; merchandising and promotion, event requirements.
- Planning and pricing menus.
- Standardizing production recipes to ensure consistent quality.
- Establishing presentation techniques and quality standards.
- Responsible for the preparation, production, presentation of all dishes ensuring high quality at all times.
- Check food items prepared by team members and make corrections if required.
- Have knowledge of all cooking ingredients, techniques, preparation and equipment.
- Supervise cleanliness of kitchen, its utensils and surrounding areas.
- Ensure proper safety and sanitation in kitchen.
- Ensure proper equipment operation/maintenance.
- Estimate food consumption and prepare requisition for food purchase.
- Keep control of all food stocks, conduct inventories.
- Inspect perishable food items received for quality control.

Job Requirements

  What you should have:
• PIC level 3 certification
• Senior understanding of professional cooking and knife handling skills.
• Understanding and knowledge of safety, sanitation, and food handling procedures.
• Previous senior kitchen management experience required.
• Professional communication skills are required.
• Must have problem solving abilities, be self-motivated and organized.
• Commitment to quality service, and food and beverage knowledge.
• Fluent in English language.
• A strong and mature leader and team player
• High commitment and reliability
